The carcass is sold for $7.68 per lb carcass weight. A beef carcass whole weighs between 500 lbs and 600lbs and you can expect between 310 and 350 lbs of actual meat after the butcher is done with it. We will know the exact weight of the carcass when we deliver it to your butcher and we will settle the difference in price at that time.
